This is the 2008 vintage of the awesome Dom Pérignon Champagnne, produced from a blend of chardonnay, Pinott Noir and Pinott Meunier grapes. A smashing release, which still remains delicate while also boasting a well-structured and punchy flavour profile. Plus bottle light up. No joke.
Food pairing:
Carpaccio of red prawns with pitaya, rose petals and lemon balm foam. Large North Atlantic langoustines fried the Korean way with seaweed and rose foam
